a recipe for okroshka!
what is it?
it is a cold kefir-based soup that you have in the summer because it is very refreshing. it is russian, and we have fond memories of eating it with our relatives whenever we visited russia when we were much younger. it's kind of like if cereal was a savoury food, and so it isn't complicated to make at all!
what does it look like?

okroshka is not famous for its looks, but what it lacks in aesthetics it makes up in refreshingness. and deliciousness.
what do you need to make it?
- 3 decently sized potatoes.
- a third or a half of a big cucumber. you're looking at 100-150g.
- 3 eggs.
- approximately 250g of doktorskaya kolbasa. if you can't find that where you live, you can probably use any type of cooked sausage.
- a whole load of kefir. you'll likely need more than a litre. if you get too much kefir, you can just drink it.
- you can also use kvass instead of kefir, or use a combination of kvass and kefir. we don't like kvass, but you might!
a lot of these ingredient quantities are just guidelines - the ratio of ingredients really just depends on what you like!
how do you make it?
- boil the potatoes. this will take 20 or so minutes - it depends on their size. to test if the potatoes are boiled, just stab them with a knife and see if there is any resistance. when it becomes easy to stab them, you're good to go!
- while the potatoes are cooking, cut the cucumber and doktorskaya kolbasa into little cubes. put those in a big bowl.
- once the potatoes are cooked, start boiling the eggs. you want to hardboil them - this will take 10-12 minutes.
- while the eggs are cooking, peel the potatoes and cut them into little cubes. put those into the big bowl as well.
- once the eggs are cooked, peel them and cut them into little cubes. those go into the big bowl too!
- mix all the ingredients that are in the big bowl.
- take as much of the mixture as you'd like to eat from the big bowl and put it into a smaller bowl, and then pour cold kefir over it until it is soupy. as previously mentioned, you can use kvass instead of kefir, or use a mixture of kefir and kvass if that's more your thing.
- you are now done! hooray! eat this to gain health and magic points and be replenished on a hot summer's day.
